サントゥアリオ・プロジェクトは農園主カミーロ・メリサルデ氏が主導するプロジェクトで、木の播種から収穫、精選にいたるまで非常に高いクオリティを持った独自のマニュアルを作り、農園の管理を行い、スペシャルティコーヒーの生産に力をいれてきました。
その中でも「ユニークで最高のコーヒーをつくろう」と本格始動したのがサントゥアリオ・プロジェクトです。
このロットは、コーヒーチェリーをパッションフルーツの果汁に浸し炭酸ガスを注入しながら嫌気発酵を行った後に、コーヒーチェリーの果汁に浸し嫌気発酵を行っています。
フレッシュなトロピカルフルーツの香りと、華やかで甘く長い余韻をお楽しみいただけます。

Introducing “COLOMBIA Santuario Project Passion Fruit” in our online store.
The Santuario Project is a project led by the farm owner Camilo Merizalde, who has been working hard to produce specialty coffee by creating a unique manual and managing the farm with extremely high quality, from sowing the trees to harvesting and careful selection.
Then, the project began with the idea of “creating a unique and high quality of coffee”
Regarding this coffee beans, coffee cherries are soaked in passionfruit juice, and anaerobically fermented, then it is injected with carbon dioxide gas.
You will enjoy the fresh tropical fruit aroma and gorgeous, sweet and long aftertaste.
